We love fried chicken, especially those fully-flavored extra crispy versions.  There are plenty of fast food restaurants that specialize in fried chicken, but why not perfect you own version?  Here we provide a simple, fast recipe to make a great version at home – or worthy to take along to your next party. There are two simple tricks to this recipe: buttermilk, and the Serious Foodie TexMex Rub, with our special applewood smoked sea salt.
 

TexMex Fried Chicken Sandwich

Make sure you leave enough time for the chicken to marinate in the buttermilk mixture. We use boneless chicken thighs all the time because of their deeper flavor and natural moisture, but feel free to use chicken breasts - which need overnight marinating.

Ingredients
  

  • 4 chicken thighs skinless, boneless
  • 4-5 tablespoons Serious Foodie TexMex Rub
  • 1 cup buttermilk
  • 1/3 cup flour, seasoned with TexMex Rub Mix in 1-2 tablespoons of spice rub into the flour right before using.
  • 2 fresh eggs whisked
  • 1/3 cup panko breadcrumbs Regular breadcrumbs are OK - panko gives extra crispy crusts
  • Salt and Pepper To taste
  • 4-6 cups neutral vegetable oil
  • 1 small Sweet onion pickled, if preferred
  • 1 fresh Optional: jalapeno pickled, if preferred
  • 2 tablespoons mayo
  • 4 hamburger buns

Instructions
 

  • Mix 2 tbs. of the TexMex Spice Rub with the buttermilk. Place chicken and buttermilk mixture into a resealable bag, and marinate in the refrigerator for at least 2 hours (overnight works best).
  • In separate dishes, lay out the flour, whisked eggs, and panko breadcrumbs. Season each piece of meat to taste with salt and pepper.
  • Remove chicken from the buttermilk, and let the excess drip off the chicken. Place each piece into the seasoned flour mixture, and shake off the excess flour. Dip into the whisked eggs, then into the panko breadcrumbs so that each piece is fully coated. Repeat for each piece of chicken. Refrigerate for 30 minutes before cooking.
  • In a medium pan, heat the oil on medium high heat until the oil reaches 350 degrees. Drop the chicken carefully into the oil, and allow to cook for at least 5 minutes on each side. Transfer to a wire rack to allow excess oil to drip off.
  • Mix 1 tablespoon of the TexMex Spice Rub into 2 tablespoons of mayo to make up the sauce. Toast the hamburger buns, place a piece of chicken on each, spread with mayo, then add your toppings.
