Blue Cheese Puree – Asian Style
Ingredients:
- 3 oz blue cheese (Use a mild blue cheese, such as Camberzola or a Gorgonzola Dolce – we used the later in our test recipe)
 - 1 tablespoon white miso paste
 - 2 tablespoons mirin
 - 1.5 oz marscopone (alternatively, use creme fraiche or sour cream)
 
Mix all the ingredients in a small blender or a food processor until smooth.
Sushi-Grade Jalapeno Sauce
Ingredients:
- 3 jalapeno peppers, seeds, stem, and ribs removed.
 - 1 ripe, medium sized avocado
 - 1 tablespoon mirin
 - 1 tablespoon fresh lime juice
 - 1 tablespoon white miso paste
 - 1/4 teaspoon sugar
 - Salt and pepper to taste
 
Mix all the ingredients in a small blender or a food processor until smooth.
