Filipino cooking is fun, boldly flavored - and can be made at home with a little bit of help. Their cuisine comes from a varied population that’s spread across an archipelago of more than 7,000 islands with many influences (Spanish, Chinese, and indigenous to name a few), so that Filipinos themselves have a hard time distilling a diverse, complex, and continually evolving cuisine into a few choice words. In her book Sarap: Essays on Philippine Food, food writer and cultural historian Doreen Fernandez describes the many cultural influences Filipinos have adopted as their own.  “Philippine cuisine” Fernandez says, “is dynamic as any live and growing phase of culture, has changed through history, absorbing influences, adjusting to new technology and tastes, and thus evolving.”
The Serious Foodie Filipino Grill rub gives you an introduction to this wonderful, flavorful culture.  The most common use for this spice combination in Filipino cooking is dry rub marinating pork, then simply grilling - and it is also excellent for chicken, beef, lamb, or fish.  Add 2-3 tablespoons of this rub to a can of coconut milk to produce a quick, elegant curry base.
