Blue Cheese Puree – Asian Style

Ingredients:

  • 3 oz blue cheese (Use a mild blue cheese, such as Camberzola or a Gorgonzola Dolce – we used the later in our test recipe)
  • 1 tablespoon  white miso paste
  • 2 tablespoons mirin
  • 1.5 oz marscopone (alternatively, use creme fraiche or sour cream)

Mix all the ingredients in a small blender or a food processor until smooth.

Sushi-Grade Jalapeno Sauce

Ingredients:

  • 3 jalapeno peppers, seeds, stem, and ribs removed.
  • 1 ripe, medium sized avocado
  • 1 tablespoon mirin
  • 1 tablespoon fresh lime juice
  • 1 tablespoon white miso paste
  • 1/4 teaspoon sugar
  • Salt and pepper to taste

Mix all the ingredients in a small blender or a food processor until smooth.
