Calabrian chili peppers have been around for a very long time – I remember seeing these spicy red peppers in my very Italian neighborhood when growing up, and my Dad using them on almost everything.  They are now popping up in a variety of recipes , and gaining an almost cult status.

Serious Foodie has recreated a Calabrian spicy relish based on these peppers imported from Italy.  The relish has typical Southern Italian flavors – a spicy vinegar based sauce with lots of umami from Italian mushrooms.  Our relish is delicious in just about everything you can imagine from using it as a pizza topping, spreading on a sandwich, stirred into soups and stews, or using it in a sauce for pasta.  In this recipe, we show how to combine just a few ingredients with the Calabrian spicy relish to make delicious sauce to impress anyone.

Easy Calabrian Pasta
1/2 Cup Chopped, Pitted, Kalamata Olives Salt & Pepper To Taste (See Note Above)

Instructions
  1. Bring a large pot of salted water to a boil. Use at least 1 1/2 tablespoons of kosher salt, and at least 4 quarts of water. Add the pasta, and cook to al dente.
  2. While the water is heating, heat the olive oil in a large saute pan over medium heat.
  3. Add the tomatoes and the Calabrian pepper relish, and bring to a simmer.
  4. Taste the sauce and season with salt and pepper as needed. Save 1-2 cups of hot pasta water. Drain the pasta, and add to the sauce, and toss. Cook for 1 to 2 minutes, or until the pasta is done to you taste. If the sauce is too thin, add some of the hot pasta water.
  5. Add arugula to each plate, and serve the pasta directly from the pan. Add the cheese, and serve.
