This Romesco sauce is a unique twist on the Spanish classic, using lemon drop peppers to enhance the iconic flavors of almonds, roasted tomatoes, and red peppers. The sauce deliciously pairs with meat, fish, shell fish, poultry, or eggs.

Instructions: Season one pound of chicken breasts or pork chops with salt and pepper.  Grill, broil, or roast meat until cooked.  Cook ¾ pound of linguini until done.  Toss the pasta with ½ jar of sauce.  Serve meat over the pasta, adding the remaining sauce on the meat.

Romesco sauce is a Spanish version of Italian pesto, typically containing ground nuts (almonds, pine nuts, hazelnuts), garlic, olive oil, roasted tomatoes, vinegar, and red peppers.  The sauce originated in the Northeastern part of Spain, where the fisherman would serve it with seafood.
